1. Choose the right ham: Select a fully cooked, bone-in or boneless ham with an adequate layer of fat. The fat layer is essential for proper scoring process, as it gives you space to create the desired pattern and adds flavor when cooking.
2. Prepare your workspace: Ensure that your workspace is clean and sanitized. Place the ham on a cutting board, preferably one with grooves to catch any liquid that may be released.
3. Sharpen your knife: To score the ham effectively, use a sharp knife. A dull knife can lead to jagged cuts, making it difficult to create an appealing pattern.
4. Cut the fat layer: With the rounded side of the ham facing up, begin cutting into the fat layer without piercing the meat beneath. Make diagonal incisions approximately 1/4-inch deep, spaced about 1 inch apart. Start from one end of the ham and work your way to the other end.
